Zein: The Solution for Delicious Gluten-Free Bread?!
The headline reads
“
food scientists say they’ve found a way to make gluten-free bread taste delicious
” and the article shares information about two “inventors'” isolation of zein, a protein found in corn, that under the right baking conditions forms similar properties as gluten to give your bread elasticity, so that those with celiac disease can finally enjoy an affordable, delicious gluten free alternative.
Um not only have I bought, made, and eaten delicious gluten-free bread for quite some time now, but it’s what those breads are full of and what zein is not that make this story and zein a Health Hall of Shame inductee.
Unlike the story leads you to believe, gluten-free can and should taste delicious, and it already does – check out some of my favorites like Manna Organic, Canyon, and Le Pain Quotidien gluten-free bread or make Socca or the “life-changing” bread from My New Roots.
What makes these gluten-free breads delicious and more nutritious is the ingredients they do contain — like whole foods, seeds, and grains. Conversely, zein is an isolated protein (made into flour it may actually be harmful for those with celiac disease, as this study recently demonstrated). And while the corn currently being used is from Italy, should zein be made in the USA it’s likely to come from GMO corn. Health Hall of Shame on Zein, for what it is and the insulting way it’s being promoted.
